Interview: Great British Bake Off winner Nadiya Hussain looking forward to Newport Show

Nadiya Hussain, the winner of the 2015 Great British Bake Off, is preparing to make her first visit to Shropshire.

She will be demonstrating recipes from her debut book Nadiya's Kitchen at Newport Show's new Festival of Food and meeting visitors to the event at the Chetwynd Deer Park.

Today she spoke of her new life as a celebrity as she looks forward to the event on July 9.

The mum-of-three says she is will be explaining to visitors to the festival how the TV show has changed her life:

She said: "This will be my first visit to Shropshire – there have been lots of firsts since I won Bake Off. It's amazing that we travel around the world going to different countries but often don't visit places on our own doorstep so I'm really looking forward to coming to Newport.

"I'm demonstrating recipes from my first cook book, talking people through what I like to cook and how I like to cook. It'll be something that's in season as I'm a great believer in using ingredients that are readily available.

"I think it's really important that people know about their food and where it comes from."

Nadiya grew up in a family where cooking was an absolute must. Her father ran restaurants and she was taught to know her way around a kitchen.

"A lot of what we ate was curry and rice and the vegetables in that can be cooked to death so I've had to learn to adapt my cooking so that it's obvious to my kids what they're eating.

"It's quite frightening that some children – and some adults – don't recognise certain vegetables or know where they come from. We have to educate people about food, especially the younger generation, which should help more healthy living.

"I am quite a varied cook and my book will reflect that. I'll cook anything from British to Korean food but more than anything, I like cooking with fresh ingredients. If I had to choose fish and seafood would be favourite. Luckily my children will eat anything I put in front of them.

"But my eldest prefers red meat and my second son loves chicken but preferably boneless, which is a bit difficult for me as cooking with the bones gives so much flavour. My little girl loves fish but they're all really good and will try anything."

Nadiya believes people's attitude towards food are changing and she thinks that in 10 years, everyone will be wanting a house with a big kitchen as they focus on cooking.

She said: "Shows like the Great British Bake Off definitely play their part and made people more interested in cooking, baking and the origins of food.

"I still have to pinch myself that I won the show. After I first auditioned for the show, I said to my husband that I was going to call them and say I wasn't doing it. He said that he wasn't going to tell me go ahead as I'd regret it. He said just don't get booted out in week one.

"I thought if I got to week four that would be pretty optimistic but when I got that far, I realised there were only 10 episodes and I think that's when I got the fire in my belly to try and make it to the final and win.

"When Paul Hollywood came over to me and gave me a hug when I'd won, I said to him, are you sure? Don't you want to give it to Tamal or Ian? I couldn't believe it.

"I stood before the camera for about 20 minutes and cried for most of it.

"People ask me whether I rehearsed what I said about believing in myself – 'I'm never gonna put boundaries on myself ever again. I'm never gonna say I can't do it. I'm never gonna say 'maybe'. I'm never gonna say, 'I don't think I can.' I can and I will' – but I didn't. The words just came from my gut.

"I still have to pinch myself that this is my life now. I went out with my nephew the other day and he was just like, you are really famous now! I think it just dawned on him that people knew who I was.

"I'm just enjoying each day as it comes and the opportunities that are coming. I would love to do more television and more writing as I really love that. I can't wait to have my first book published and I'm really looking forward to sharing that with people at the Newport Show."
