Mr Elcock revealed the blaze, which ripped through the shop on Brunel Road in the early hours of Monday morning, may have been started by an accelerant.
He said: "The rear doors of the premises were forced in this fire which we are treating as arson.
"The doors led to the store room which was set on fire, possibly by the use of an accelerant.
"Specialist forensic investigators are coming in this afternoon, including special police dogs which will identify the seat of the fire and establish if it was started by an accelerant.
"The speed that the fire took hold suggests an accelerant was used.
"We believe the fire was linked to some disorder which occurred over the weekend but we are keeping an open mind."
Mr Elcock said it was vital witnesses came forward if they had any information about any events over the weekend but especially in the hours leading up to the fire at 12.30am.
"Forensic investigators are continuing to examine the scene which has been a lengthy examination frustrated by the fact that engineers have been called to make it safe so a more thorough examination can be carried out."
