The roof of the building in Haygate Road, by the entrance to Bowring Park, was destroyed in the accidental fire on July 25.
The 1920s building is owned by Telford & Wrekin Council but leased to Matthew Gillett, 46, from Wellington, who ran the snack hut.
Russell Griffin, spokesman for the council, said: "We have made the building safe and taken the roof off.
"We are now looking at costs of repair and keeping the tenant informed but it is unlikely to be operational until next season."
Mr Gillett had run a cafe in the building since April and had a three-year lease.
