The 42-year-old leaves National League outfit Solihull Moors – where he managed for five years – to take the reins at Blundell Park.
Birmingham-born Bignot featured for Telford between 1992 and 1996. He left to spend a season at Kidderminster Harriers before switching to First Division Crewe.
He also spent seven years in charge of Birmingham City Ladies.
Grimsby have drawn 0-0 at Yeovil and lost in the FA Cup at Bolton since Hurst departed for Shrewsbury Town last month.
